View Full Version : Cookin a brisket today

I've got a 6lb brisket flat on the smoker that'll be ready around dinner. I've had minimal success with briskets, so I'm keeping my fingers crossed... Briskets are kinda the "holy grail" of BBQ, so I'm trying to hone my methods. Does anyone else here BBQ? I've made some badass butts (pork butts, comes from the shoulder) and ribs and tenderloins, but really good brisket still eludes me...

Cooking Brisket is like cruising in a Coupe DeVille....Low and slow, man! ;)


Just the thought is making me hungry...

Hell yeah, low and slow is the ONLY way to cook cuts like brisket and butts. I put it on at around 9:oo EDT this morning, and it'll be done around 4:00. I just foiled it at around 165F internal temp, and it'll finish to around 195 in the foil.

Well how did it turn out!!!! When BBQing pork I like to pritz the meat with apple juice as it cooks.

It actually came out pretty good. Definately the best brisket I've turned out. Now hopefully it wasn't a fluke and I can actually do it again!

Try one marinated in Italian dressing overnight and then slow cooked. Mmmm.... Nice and tender.

pritz??? wtf don't sound very man'ly to me!! lol is that like "spraying"... HEY there's a plate for ya " on the pritz" or " PRITZING" (just have'n a little fun Z28 sitting here bored)
